- Setelah dirasa matang, dinginkan cream brulee hingga mencapai suhu ruang. Lalu taburi dengan gula kastor secukupnya hingga permukaan creme brulee ter-cover..
- Lalu bakar dengan obor (torch) hingga permukaan creme brulee sedikit gosong..
- Kemudian masukan ke dalam kulkas chiller minimal 3 jam agar dingin dan padat..
- NB : Kalau ga punya obor, ada teknik lain buat bikin karamelnya.. Pertama, bisa bikin karamel secara manual lalu di tuangin ke atas creme brulee nya.. Kedua, panaskan sendok di atas kompor. Pegang gagang sendok pakai cempal biar ga panas di jari.
